With waffles named Best in Las Vegas by the Las Vegas Review-Journal every year since its opening three years ago, Café Saga Pastry + Sandwich will be branching out from its Henderson home to a new location as part of Cloud Diner on Hughes Center Drive.
In its three years running, the restaurant has been introducing the Henderson area to popular dishes from Norway, Sweden, and Denmark, with its famous waffles and sandwiches, and with Scandinavian favorites like Arctic cold-water shrimp and smoked salmon.
Like many restaurants, the location at 10345 S Eastern Ave was affected by the COVID-19 pandemic. “COVID was rough,” owner Gert Kvalsund told What Now Las Vegas in a Monday afternoon phone call. “But we made it through.” And now the restaurant is expanding and taking its Scandinavian cuisine to a new market.
“There’s never been Scandinavian food in Vegas,” Kvalsund said. “I’ve been here 26 years, and it was always a dream of mine to start serving the food I grew up with, the home cooking.”
Kvalsund added that the new location’s increased kitchen capacity—it has room for a stove and hood—will allow for new additions to Saga’s menu. He mentioned Swedish meatballs as an appealing possibility, since it’s a dish Americans are already familiar with.
The restaurant will join the lineup at Cloud Diner, the innovative new cloud-kitchen-plus-dine-in expected to open in December at 325 Hughes Center Dr. “To expand to a new market is exactly what I want,” Kvalsund said. “Spread the waffle love.”
