Cafe Rio to Replace Einstein Bros. Bagels West of the Strip

Fast casual restaurant will serve fresh, Mexican-American-inspired fare

Cafe Rio Mexican Grill has filed a permit to remodel what had formerly been an Einstein Bros. Bagels at 4415 W Flamingo Road.

The new Cafe Rio will be less than two miles from the Strip, joining fifteen other locations across the greater Las Vegas area.

The fast casual restaurant serves authentic Mexican dishes inspired by Northern Mexico’s Rio Grande region, Southern Texas, and New Mexico, including its signature sweet pork barbacoa and enchilada-style burritos.

Chief Director Officer Tim Mosbacher was unavailable for comment at the time of this article, but be sure to check back here for updates on when to expect the new Cafe Rio to open its doors.
