University Plaza, a small retail center on the southeast corner of the Tropicana AveMaryland Pkwy intersection, will soon welcome Las Vegas’s first GoPoké, a Seattle-based poké chain that famously won the Fast Casual Executive Summit’s Perfect Pitch contest. Permit paperwork recently submitted to Clark County shows the renovations to the space are currently underway, with some renovations to the space already completed.

What Now Las Vegas was unable to reach cofounder Bayley Le on Tuesday for comment on the location’s progress.

GoPoké takes a build-your-own approach to its poké bowls, allowing guests to choose between the bowl form, “pokérittos,” and spicy rolls. Pre-imagined bowl ideas include the 12th Man Bowl (Salmon, Spicy Aioli Salmon, and Spicy Aioli Ahi) and the Fy-ahh Bowl (goPoké Spicy Ahi, Spicy Aioli Salmon, and goPoké Spicy Tako).

The location on Tropicana Avenue neighbors PT’s PubQueen’s Caribbean African RestaurantDel Taco. While the hard opening date still has yet to be announced, the University Plaza location should be expected to open in the near future.
