Cookio Cafe to Open with Cookies, Pastries, Coffee, and a Cuban Sandwich

Two local bakers, Johnny and Alejandro, are preparing to open a new cafe and bakery in Spring Valley, near the intersection of South Fort Apache Road and Tropicana Avenue. Called Cookio Cafe, this upcoming spot might just be your next favorite place for cookies, pastries sweet and savory, and an Americano.

It’s opening, according to licensing paperwork submitted to Clark County, at 4845 S Fort Apache Road, Unit D.

Johnny and Alejandro have been baking and selling cookies for some time, but Johnny says opening a bakery offers additional levels of creative potential.

“For a while we only had cookies because that was what you can ship,” Johnny said. “We’ll be doing sweet pastries, savory pastries, and other Latin desserts—these are things we couldn’t ship all over the country because of the texture.”

And that’s not all—there will also be espresso-based coffee drinks, smoothies, milkshakes (eventually), a chicken sandwich with a sweet curry mayo, a Cuban sandwich, and more.

“We’re from Costa Rica, where we used to have a cafe with Cuban food, so we’re going to incorporate that.”

Cookio Cafe is waiting on permits to open but expecting to launch early in 2025.

“We hope to open a production center and have Cookios all over town,” Johnny said. “We’re proud to offer people what we love.”
