Cupbop’s decadent noodle bowls have been objects of desire for Korean barbecue lovers since 2013. Now, they will open their third Vegas storefront at 1100 S Fort Apache Rd. this coming spring.
Junghun Song first launched Cupbop out of a food truck in Salt Lake City, then gradually expanded to a number of brick and mortar shops in Utah, Idaho, Colorado, and Nevada.
The other existing Las Vegas locations can be found on Maryland Parkway and, soon, Lake Mead Boulevard. Launching the most recent expansion is franchise owner Michael Bevans, who also happens to be a huge fan of the product.
“There’s not a lot of stuff that competes with this flavor profile,” Bevans told What Now Las Vegas. “It’s a really unique take on Korean barbecue. It’s a healthy make-up of fresh meats, alongside lots of gluten-free options, and all for a really great price.”
The menu offers a range of Korean-American fusion flavors, including Bevans’s personal favorite, the Rock Bop: a barbecue fried chicken bowl. Other selections include the Noodle Bop, which incorporates Korean sweet potato noodles with rice and cabbage.
Bevans added, “If the folks of Vegas come out and try Cupbop, they’ll see why we love it so much.”
As the Cupbop motto says, “Shhhh… just eat!”
