Eddie Bo’s Cooking LLC Looks to Be at Work on First Brick-and-Mortar

Eddie Bo’s Cooking LLC, the Las Vegas food truck “Where East Coast Flavor Meets West Coast Vibe” appears to be at work on its first brick-and-mortar restaurant. Licensing paperwork submitted to the City of Las Vegas shows an Eddie Bo’s opening in the works at 1028 Fremont Street, part of the Fergusons Downtown shopping center.

“Get ready to taste what happens when East Coast meets West Coast flavors — all in one bite!” says an Instagram post published by the food truck. “From our mouth-watering shrimp and catfish Po’ Boys, to juicy Phillys, crispy wings, loaded fries, and sides that taste like home — we’re serving up comfort food with a coastal twist.”

A menu posted on the Instagram page features Fast Food choices like burgers, wings, and hot dogs, alongside sandwiches like the Catfish Po’ Boy, the Jerk Salmon Po’ Boy, and a Philly Cheesesteak.

What Now reached out on Friday to owner Eddie Brignoni to ask about plans for the opening. Brignoni was not immediately available for comment on news of an Eddie Bo’s restaurant opening at Fergusons Downtown.

Opening there, Eddie Bo’s would join restaurants like F the Bar and Mothership Coffee.
