Evolve Brewing by Aces & Ales has opened at The Bend in the Southwest Valley of Las Vegas, located at 8680 W Sunset Rd, E-100, Las Vegas, NV 89148. This 9,000 SF, 300-seat brewery features a state-of-the-art 10-barrel brewing system, scratch-made food kitchen, VIP/private event space and two dog-friendly outdoor patios.
The grand opening kicked off a “Beer Cheers Party,” with the first 50 guests who lined up at 10 a.m. Friday, February 21st received a FREE Evolve brewed beer on the house.
Founded by the team behind Aces & Ales, Ryan Johnson and Keri Kelli, Evolve Brewing is offering 24 rotating tap lines, Crowlers and cans to go. Crafted under head brewer Josh Kunzli, the team aims to honor the traditions of brewing while embracing the excitement of innovation. Beers are crafted with the finest ingredients – malted barley, hops, east and pristine filtered water, ensuing every detail is fine tuned for unmatched flavor and quality in every sip.

Kunzli has more than eight years of brewing experience in the Chicagoland area and Austin, Texas. While his specialty lies in IPAs and fruited kettle sours, he has a deep love for crisp, clean lagers, with customers seeing a lineup featuring Mexican lagers, Czech pilsners and maybe even an amber or two. The brewing program at Evolve Brewing will showcase a rotating fruited kettle sour (kicking off with passionfruit), bold West Coast IPAs (a crushable 6% and a punchy 7.5%), a juicy hazy IPA, and a refreshing Blood Orange Wheat. These are just the starting lineup—each beer’s fate will be decided by what guests love most.
“When it comes to pushing the boundaries, I’ve had a blast experimenting with Kool-Aid kettle sours (shoutout to Cheba Hut in Wicker Park, Chicago), Strawberry Sour Belt & Strawberry Lager (Hi Sign), and a powerhouse 14.5% barrel-aged stout,” said Kunzli. “Every now and then, I’ll whip up something wild like an Orange Creamsicle Hazy IPA (inspired by Hop Butcher for the World in Chicago) or a Pink Guava Milkshake IPA. And while we’ll dabble in heavily fruited sours, they won’t be syrupy thick—that’s just not my style.”
The kitchen at Evolve is under the direction of Las Vegas native Krystal Meza who has more than 14 years of culinary experience. Guests can expect to savor additions like a 10 oz. USDA choice ribeye, parmesan herb crusted chicken, and grilled salmon delicately placed over a bed of organic rice, quinoa, and fresh vegetables drizzled with lemon butter. Appetizers include bacon bombs and cheese curds, while entrees include French dip, pizzas, turkey wraps and a spicy crispy chicken sandwich. Evolve is a scratch kitchen with everything made fresh in house and to order.
Evolve Brewing by Aces & Ales is open 11 a.m. – 11 p.m. Sunday thru Thursday and 11 a.m. – 12 a.m. Friday and Saturday.
