Two blocks from the Las Vegas Strip, the Paradise Road community welcomed a unique new Famous Dave’s restaurant into their neighborhood yesterday, where the BBQ chain opened its first “Quick ‘Que” restaurant.

The new location occupies a space of only 2500 sq. ft. The menu is abbreviated, sticking to Famous Dave’s tried-and-true favorites: the burgers, the sandwiches, the ribs, brisket, salads, and sides like Mac and cheese and a new Brussels sprouts dish. It has a considerably smaller footprint than the average Famous Dave’s, and it can move food fast—and profitably.

In a phone conversation on Friday morning, franchisee Alejandro Orozco told What Now Las Vegas that the idea for a line service restaurant emerged from the new realities of restaurants and what people want from them in the post-COVID world.

“It just seems like the way to go,” Orozco said. “We’ve gotten a really good response from the customers. It’s very convenient. These days people want to take their food and go home.”

The location on Paradise Road is a smart spot for such an experiment. Avoiding the overhead of renting on the strip while remaining with walking distance of it, the Famous Dave’s Quick ‘Que is surrounded by apartments. “We can reach out to them with a lot of delivery,” Orozco said.

In the same phone call, founder Dave Anderson summed up the relationship between the BBQ chain and Las Vegas: “Barbecue is how America celebrates, and Las Vegas is a celebration city. People love Famous Dave’s, and Famous Dave’s loves Las Vegas.”
