Back in March, the Las Vegas Review-Journal reported that Firefly Tapas Kitchen + Bar is planning to open its third Las Vegas restaurant. Work permit paperwork submitted recently to Clark County may finally reveal the third location’s destination. The paperwork describes a “Firefly” restaurant project at 335 Hughes Center Drive, with a contract valuation of $350,000 to remodel the existing space.
Behind the restaurant are Chef John Simmons and Tabitha Simmons, the restaurateur team also behind plant-based restaurant Graze Kitchen. What Now Las reached out to Tabitha Simmons on Thursday. She was not immediately available for comment.
Firefly offers a considerable selection of small plates in categories that include Brunch, Chilled Tapas, Hot Tapas, Seafood Tapas and more. Meat and Poultry Tapas include Ham & Cheese Croquetas, Chicken Tinga Empanadas, and Albondigas (meatballs in sherry tomato sauce, parmesan). A vegetarian menu features cold tapas like Apple and Manchego Salad, hot tapas like Pan-Roasted Brussels Sprouts and Stuffed Peppers, and vegetarian Paella.
The building in question sits between Hughes Center Dr. and Flamingo Rd., among several other food and drink locations, including Lolo’s Chicken & Waffles, Bahama Breeze, and Fogo de Chão Brazilian Steakhouse.
According the Review-Journal coverage from March, Firefly’s third location is expected to open next year.
