Graze Restaurant Takes Steps Toward Opening with Permit Filing

Exciting new vegan restaurant determined to open this summer

The plant-based restaurant has filed a permit for 7355 S Buffalo Drive. Graze Kitchen will sit among Firefly* Tapas Kitchen & Bar and Graffiti Bao, part of Dapper Cos.’s Buffalo Springs Point project. The vegan eatery will be moving into the vacant suite that had formerly housed the fitness center Power Hour 360.

Owner Amelia Cooper partnered with Firefly* Owners John and Tabitha Simmons to bring forth this highly anticipated new vegan restaurant that will provide “good music, good lighting, great service, great-tasting food that fills your belly and fuels your soul,” Tabitha told What Now Las Vegas in January.

Since then, the team of chefs has been hard at work developing Graze Kitchen’s house menu. Their Instagram reveals sneak peeks of potential exciting plates, such as a Roasted Asparagus & Lemon Herb Penne, Egg Roll Tacos, and Korean BBQ nachos, as well as irresistible desserts like their Chunky Monkey Pudding Parfait.

Originally hopeful of opening this spring, Graze Kitchen now aims to open this summer.
