A new all-organic juice and smoothie bar brand is set to make its debut this summer in Rhodes Ranch. Greenhouse Juice Bar will open at 9490 W Russell Road, in the retail center currently under construction on the northwest corner of the intersection with South Fort Apache Road.
“It’s something I’ve been working on in my head for so many years,” owner Sarah Lucas told What Now on Monday. Lucas has spent eight years in hospitality industry, working in a variety of leadership, management, and ownership roles. “I really homed in on a concept I thought would do well in the Las Vegas area. It’s healthy food that’s convenient and delicious.”
Although much of the menu is still under wraps, Lucas says Greenhouse will offer a variety of pressed juices, smoothies—including recipes Lucas has been honing for years—and sourdough pizzas for guests looking for something heartier. There will also be a retail component, with grab-and-go items and other goods like organic sourdough breads, chia pudding, bottled juice and more.
What’s it like making a debut in a plaza that’s still under development?
“I loved that the space was new,” Lucas said. “I could build from scratch, create my own energy in the space. It’s the perfect-sized spot. Everything aligned; it was a no-brainer.”
Lucas says the opening represents the culmination of a nearly decade spend building experience.
“The concept has a lot of effort going into it, to make it something that’s health-conscious, delicious, and convenient, and I’m looking forward to give back to the community in that way.”
