Hardwood Barbecue is a Vegas-born, Texas-inspired food truck that is set to roll into the Valley in early 2026. The Central Texas-inspired meals on wheels establishment filed a permit with the City of Las Vegas recently, and the owners shared that they’re inching closer to opening.
“We’re still scouting the perfect spots for our trailer, but one thing’s for sure: we’ll be serving the amazing community of Las Vegas,” Hardwood Barbecue co-owner Mike Larion said to What Now Las Vegas via text.
“As soon as we lock in our locations, we’ll post all the details on our Instagram.”
Mike shared that you’ll likely be able to find Hardwood Barbecue, cueing down and serving up a plethora of good eats in and around the Northwest Centennial area.
Mike is joined by his wife, Tonya, in this culinary adventure, and though this is the beginning of something beautiful for the two, and Sin City, the Hardwood Barbeque story actually starts back in 2010.
“I started barbecuing in 2010 with a cheap barrel grill from Target. Nothing fancy, just fire, meat, and curiosity,” Mike said.
“The first time I built a coal bed, I knew I’d found something that felt like home.”
Mike shared that he took that passion to the debated birthplace of barbecue, Texas. It was there in Central Texas that the concept behind Hardwood Barbecue was conceived.
“To me, it’s more than a meal. It’s tradition, connection, and a way to bring folks together. I’m proud to bring and share that spirit with the Vegas community,” Mike said.
Now, the Larions will be smoking and dishing out everything from beef brisket to pulled pork and spare ribs. A unique addition that’s unlikely to pop up in the Valley is Hardwood Barbecue’s scratch-made Jalapeno Cheddar Sausage, a fave for Mike, who admittedly had a hard time with this admission.
“(My fave is the) Jalapeño Cheddar Sausage!!!! I’m probably supposed to say “Everything”, but I am very proud of making my own sausage,” Mike shared.
The sides will also come with homemade love. At Hardwood Barbecue, you can pair any of the offered meats with Mac and Cheese, Brisket Baked Beans, or Smoked Cheesy Potatoes.
At the end of the day, that’s what it’s all about for the Hardwood Barbecue owners: providing food with love to the Greater Las Vegas community.
“In my family, barbecue brings everyone together. The smiles on people’s faces and the happiness they feel when they eat my barbecue make all the time spent maintaining the fire and monitoring the meat worth it,” Mike said.
“We hope that everyone who comes to try our food falls in love with barbecue at the first bite, just like we did. And once you try our barbecue, we hope you’ll keep coming back!”
