Holsteins To Close at the Cosmopolitan

Holsteins will make way for another concept from Gen3 Hospitality

Known for “Good Food! Good Times!” Holsteins has had a strong run at the Cosmopolitan. And now, after more than ten years, the brand from Gen3 Hospitality will soon be saying goodbye, says coverage by the Las Vegas Review-Journal. Holsteins is slated to close July 9.

“Voted Best Burger in Las Vegas, Holsteins delivers a fresh, homegrown attitude to The Strip,” says the Holsteins website.

The brand’s over-the-top burgers have included the Billionaire Burger (Foie gras & prime beef blend, provolone cheese, onion marmalade, port reduction, frisée, arugula & truffle aioli) and the Short Rib Burger (braised short rib, provolone cheese & onion ring).

The Review-Journal coverage says Gen3 Hospitality, the company behind Holsteins as well as other Las Vegas concepts like Haute Doggery, Elephant Bar, and Flour & Barley, is planning to replace Holsteins with a new restaurant. It has also encouraged current Holsteins employees to apply to work there.

What Now reached out to Gen3 president Stacia Stephens on Friday to inquire about plans for the new restaurant. Stephens declined to comment at this time.
