CARBONE Riviera, the newest Italian seafood restaurant, is set to open at Bellagio in Las Vegas next month. The restaurant’s opening on November 7 aligns perfectly with the F1 Vegas Grand Prix on November 22 and the upcoming holiday season. Reservations start on October 9 at the dining spot by Major Food Group.

CARBONE Riviera to Open its Doors at Bellagio, Las Vegas

CARBONE Riviera is preparing for its debut at Bellagio on Friday, November 7. Seafood takes center stage at CARBONE Riviera, the newest Italian dining destination in Las Vegas.

CARBONE Riviera is open seven nights a week from 5 p.m. to 11 p.m., with reservations available at Bellagio.com or by calling (702) 693-6705.

Major Food Group co-founders Mario Carbone, Rich Torrisi, and Jeff Zalaznick partnered with MGM Resorts International to bring CARBONE Riviera to Las Vegas, building on the beloved flavors of the original CARBONE’s Italian-American menu.

A Culinary Evolution

Fresh fish is the star at CARBONE Riviera, the Italian seafood restaurant at Bellagio. Guests can savor crudo, salt-baked branzino, and grilled Dover sole, served tableside with CARBONE Riviera’s signature flair.

Chef Mario Carbone’s Spicy Lobster Meatballs is a highlight item at the Bellagio location. Patrons can find pasta offerings, such as a two-pound Lobster Pasta. Guests can pair it with the signature Spicy Rigatoni Vodka.

Scenic Lakeside Views at the Bellagio Location

The Fountains of Bellagio provide a stunning backdrop for diners at the indoor bar and lounge. An outdoor lakeside deck and patio offer sweeping views of Bellagio’s Mediterranean-blue lake.

Bellagio Resort & Casino overlooks an 8½-acre Mediterranean-blue lake and brings the charm of Europe’s picturesque villages to the heart of Las Vegas.

Bellagio hosts acclaimed dining staples like the Prime Steakhouse and The Mayfair Supper Club. The Las Vegas crowd stops by for its Conservatory & Botanical Gardens, art gallery, spa & saloon, and an exclusive shopping spot. Cirque du Soleil’s “O” performance was also presented at Bellagio.
