Longtime Paris Baguette Franchisee Expanding Brand’s Reach in the Valley

With one location opening in Vegas this fall, Andrew Yoo says he plans to open eight more

With two locations already open in Vegas, plus 200 more in the U.S. and a total of about 4,000 worldwide, French-inspired South Korea-born bakery chain Paris Baguette is already a bread and pastry behemoth, and it’s still growing fast. In fact, it plans to surpass 1,000 units by 2030.

One of the franchisees behind the brand’s growth is Andrew Yoo. Yoo currently owns and operates eight Paris Baguette locations in California, and he’s opening his first Las Vegas store this fall: it’s already under construction at 10965 Lavender Hill Dr.

“We started as a franchisee in 2017, when we bought a corporate store. Then we opened another one; and now we have eight stores, with another five or six under development,” Yoo told What Now on Wednesday.

Offering a broad selection of baked goods, breads, coffee, cakes, and more, Paris Baguette has grown in popularity as space has opened for concepts that might once have been seen as limited in their reach.

“When we began, it was very limited within the market, very Asian-oriented. But now mainstream USA has caught on. It’s very diverse now; you can put Paris Baguette anywhere, and it’s very successful.”

The Lavender Hill Drive location will be familiar to anyone who has visited Paris Baguette before: you walk in, take a tray, and select from a wide range of baked good, breads, pastries and more. At the counter, you can order a coffee or other hot or cold and beverage. This location will also have seating for 48-50 guests, Yoo says.

“Our signatures are our pastry line and our cake line. The pastry is fluffy, soft on the inside and crispy on the outside. And our cakes are also lighter like that, fluffy, not so sweet as a cake you’ll get at Costco.”

Yoo says an opening is expected in August or September, with another location coming down the pipeline perhaps as soon as six months after that.

“We’re trying to open eight more,” said Yoo.
