The new take on Major Food’s Carbone concept will replace Picasso

“Bellagio and Major Food Group Set to Begin a Thrilling New Chapter of Las Vegas Fine Dining with the Debut of CARBONE RIVIERA This Fall,” reads an announcement posted on the Bellagio website.

It’s major food news: another entry to the Las Vegas Strip by Major Food Group. Major Food is the hospitality company behind legendary restaurants like Carbone, Carbone Vino, Chateau ZZ’s, Dirty French, and lots more, with restaurants in cities as far-flung as New York, Riyadh, and Hong Kong.

“Carbone Riviera will take [the] Italian-American culinary legacy of Major Food Group’s Carbone in a new direction—one driven by seafood, which seems like a natural match for its prime fountain-side location,” says coverage by Las Vegas Weekly.

Seafood is indeed the center of Carbone Riviera, as the announcement says:

“At the heart of the experience is an extraordinary whole fish program, executed with the signature ceremony and flair that defines CARBONE. From salt-baked branzino to grilled Dover sole, each preparation is presented tableside by captains trained in the brand’s hallmark style of theatrical yet refined service. The vast and varied menu will also include Chef Mario Carbone’s Spicy Lobster Meatballs, delicately cooked seafood of exceptional provenance, and an incredible selection of pastas such as a two-pound Lobster Pasta—anchored, of course, by the iconic Spicy Rigatoni Vodka.”

What Now reached out to Major Food Group CDO Will Nazar on Friday to ask about plans for Carbone Riviera. Nazar was not immediately available for comment.
