The food and beverage community based around the intersection of West Sahara Avenue and Paseo Del Prado will soon welcome a new restaurant into its food and drink community. Called Forke Restaurant, it will replace Big Jerk Kitchen + Lounge at 2800 W Sahara Ave, Suite 5A.

“We’re still in the infant stages, planning licenses and renovations, but we’re hoping to open in mid-October,” owner Jerome Jeannest told What Now on Tuesday. “It’s going to be a French-American restaurant. Some classic French food, some American food too.”

Jeannest brings twenty years of hospitality experience to bear on the project. For him, it’s tradition.

“It runs in my family. My brothers are chefs in France, so it’s a family tradition. Some of these recipes are from my mom and grandma. They’re traditional recipes with a modern twist.”

Think Confit; think Beef Bourguignon; think Steak Frites, Beef Tartare, and other French favorites.

The menu will be crafted by Executive Chef and Partner Miguel Martinez. Having held leadership positions at Todd English, El Dorado Cantina, and PKWY Tavern, the chef is no stranger to the Las Vegas culinary landscape.

Chef Miguel brings “nearly 20 years of culinary excellence to the kitchen,” says a bio Jeannest provided to What Now, “defined by a deep respect for ingredients, refined technique, and a passion for hospitality. His cooking philosophy centers around seasonal, ingredient-focused cuisine executed with precision and creativity to deliver unforgettable guest experiences.”

Inside, Forke Restaurant will feature a streamlined, modern look: “French-American flare, nothing tacky, no big images of the Eiffel Tower; simple, modern,” Jeannest says. The space will have seating for about 80 guests, plus additional seats outside.

Even more exciting: Forke restaurant will be home to a speakeasy too.

“The speakeasy will be more in the French style,” Jeannest said. It’ll feature vibes from “the World-War-II resistance era in Europe.”

We can’t wait to check it out!
