You might have heard: Durango Casino & Resort has finally made an announcement revealing the details on its food hall, which is due to open (along with the resort itself) in Fall 2023. What Now first reported on the food hall last summer, but at last we have a name: Eat Your Heart Out.
Eat Your Heart Out will feature several new concepts like Al Pono Café and Marc Vetri’s Fiorella, along with new locations from local brands like Yu Or Mi Sushi and Vesta Coffee. Over the next few weeks, What Now will take a closer look at a number of these concepts.
Las Vegas’s own Vesta Coffee Roasters currently offers its selection of toasts, “Sandos,” salads, and coffee and tea beverages at two locations, one in Downtown’s Art District, and the other in Summerlin/The Lakes. It will open its third location this fall as part of Durango Casino & Resort’s upcoming food hall Eat Your Heart Out.
The EYHO location will offer everything guests have come to expect at other Vesta locations, owner Jerad Howard told What Now on Wednesday. “We do all our own bakery items, bread made in-house, pastries, sourdough, plus of course all our coffee drinks. Everything.”
Plus, don’t forget creative sandos like the Hawaiian Benedict Sandwich with sriracha Hollandaise and tartines like the Salmon Toast, with fromage blanc, rosemary ash, crispy capers, pickled onion, and fennel fronds.
Meanwhile, more news about Vesta is soon to come. Howard says the brand has big news to break in the near future, although he has declined to reveal it just yet. In the meantime, it’s safe to get psyched about the news we already have.
“We’re so excited about that location,” Howard said. “There’s are a lot of restaurateurs there who are the who’s-who, and who I’m just excited about. To be stacked up with that kind of talent is really cool.”
