One of the projects we’re most excited to see come to fruition in 2023 is UnCommons’ food hall The Sundry. We’ve been reporting on The Sundry since the fall (and on UnCommons for much longer), and the news continues to trickle in. This week the news was disappointing: The Las Vegas Review-Journal reported that celebrated chef Dominique Crenn’s much-anticipated Sundry project has been scrapped. The question of what will replace it is one we’ll be following.

The Sundry is expected to open at UnCommons this spring. In the meantime, here’s another Sundry concept we’re excited about:

Joining the ranks of UnCommons’ The Sundry food hall is Vegas-born brand the Proper Sandwich Company. Founded by partners hospitality veterans Eric Perlin and Phil Park, Proper Sandwich has a location currently operating at 6181 S Rainbow Blvd; the one at The Sundry will be its second.

Sandwiches on the Rainbow location’s menu range from the Italian Hoagie (French ham, coppa, salami calabrese, mortadella w/ pistachio, aged provolone, giardiniera, shredduce, onion, red wine vin, mayo) to Chicken Bánh Mì (grill char siu chicken, pickled carrot & daikon, jalapeño, cucumber, cilantro, mint, scallion, mayo on classic bread). There’s also a selection of sides like Sour Cream & Onion Potato Salad and Triple Cheddar & Pimento Dip, plus salads like the Proper Wedge.

It is not yet known how closely the Sundry location’s menu will match that of the current location on South Rainbow Boulevard.

What Now reached out to Phil Park on Friday. Park declined to comment on the upcoming location.
