This spring, Wynn Las Vegas will welcome the newest addition to its food and drink roster: PISCES Bar and Seafare. The resort announced the news last week, not long after word got out that another restaurant, Fabio Trabocchi’s Fiola Mare, had fallen through.
PISCES Bar and Seafare will “celebrate the distinctive cuisine of the Mediterranean coast with a menu from Executive Chef Martin Heierling,” says a press release put out by the resort.
“PISCES’ immersive and transportive atmosphere will channel effortless, seaside chic,” Todd-Avery Lenahan, President and Chief Creative Officer of Wynn Design & Development, said in the press release. “The juxtaposition of spectacle and subtlety on display, from mid-century textile art to yachtsman chairs made of rosewood, fish skin leather, and espresso mohair, results in a dynamic environment that complements the innovative menu.”
In the new restaurant, which will open this spring, guests will find menu featuring “caviar and crudo, dry-aged fish, bountiful seafood platters and fresh pasta.”
“Chef Martin Heierling’s expertise and vision, combined with the energy of the space, will usher in this new concept that reflects the essence of Wynn,” Christopher Lee, Vice President of Culinary Operations and Restaurant Development at Wynn Las Vegas, said in the release.
What Now reached out to Lee to inquire further about the upcoming restaurant’s menu. Lee was not immediately available for comment.
