Two and a half years ago, What Now reported and plans to open Splash Fresca Bar, a new aguas frescas concept, at the Grand Canal Shops. There soon followed reporting on plans by Tony Ravelo, the owner of Splash Fresca Bar, to open a taco concept, Michos Tacos, at Resort’s World.
These two restaurants are part of the Ravelo Brands family, which also includes concepts like Michoacan Mexican, Blizz Frozen Yogurt, and Flecha.

Now, that family is preparing to grow with the addition of a new poke brand: Poke Studio.
“COMING SOON,” says a description on the Ravelo Brands website. “Poke Studio offers a delightful fusion of fresh ingredients and innovative flavors, crafting delicious bowls that transport your taste buds to the shores of Hawaii with every bite.”
On Wednesday, What Now reached out to Tony Ravelo to ask about plans for Poke Studio after coming across submitted building permit paperwork showing Poke Studio opening at 3555 S Las Vegas Blvd, in the Flamingo. Ravelo was not immediately available to discuss the opening of Poke Studio or confirm that it is indeed opening at the Flamingo.
