[Renderings] Tacos El Cabron, Wally’s Wine & Spirits Slated For a Summer Debut in Resorts World

When Resorts World opens its hotel and casino at the north end of the Strip this summer, it will be home to two California-based hospitality concepts — Tacos El Cabrón and Wally’s Wine & Spirits.

Tacos El Cabrón, which got its start with an outpost in San Diego, is opening a total of three Las Vegas locations in 2021, including the Resorts World outpost. That’s according to Jesse Larios, the growing restaurant’s new operating partner.

The Resorts World location is targeting a May 31 debut, according to Larios, following an opening at 4808 Maryland very soon (it was supposed to open in mid-February in space formerly home to Stir Krazy Mongolian Grill). Plans also call for an outpost at the intersection of Decatur Boulevard and Meadows Lane, although Larios did not specify that location’s timeline.

With locations in Santa Monica and Beverly Hills, Wally’s will bring its trifecta of offerings when it opens in Resorts World: a restaurant, wine bar, and specialty gourmet market “creating a one-stop tasting and shopping experience,” according to an announcement Monday. It will be the first location outside of California for the company.

“At Resorts World Las Vegas, we hope to bring an unmatched culinary lineup to Las Vegas, including concepts new to the Strip, and we could not be more thrilled to be home to the first location of Wally’s Wine outside of Southern California,” Scott Sibella, President of Resorts World Las Vegas, said in the announcement. “With their unique concept and expertly curated, high-quality wine products from all over the world, we know Wally’s Wine & Spirits Las Vegas will quickly become a new staple in this city.”

Located in the heart of the resort’s retail and dining district, the two-story venue will feature a main dining room surrounded by 12-foot tall wine racks showcasing Wally’s beverage collection; a terrace with seating that overlooks the resort’s 50-foot diameter LED globe; twin bars with stone countertops; an open display kitchen; a retail market with glass cases containing selections of cheese and charcuterie; and a lower-level cellar with two private dining rooms.
