With its “Craft Made, Curiously Delicious Ice Cream,” Salt & Straw has made a name for itself all over the country, from California to New York, with many more scoop shops in between—including a location at UnCommons Las Vegas. Now, the brand is preparing to make its debut on the Las Vegas Strip, and it’s doing so with aplomb. According to coverage by the Las Vegas Review-Journal, Salt & Straw is planning not one but two locations for the Strip.
One will open at the Flamingo this fall, with “an entrance from Las Vegas Boulevard adjacent to Gordon Ramsay Burger.”
The other is headed to Paris Las Vegas, at the bottom of the Eiffel Tower, with an opening slated for early 2026.
“At Salt & Straw, anything is possible,” says the brand’s website. “Crafted with unthinkable care, our team cooks, freezes, candies, smashes, drizzles, ribbons, spoons, and sprinkles, creating flavor profiles that awaken taste buds. Using ice cream as a blank slate for storytelling, we fearlessly explore ingredients, discover emerging artisans, and share inspiring, unifying experiences.”
And “anything is possible” is no joke. Salt & Straw is known for imaginative and adventurous flavors like—to pick a few at random—Gruyère and Tomato Custard Tart, Arbequina Olive Oile, Rhubarb Crumble with Toasted Anise, and The Salty Donut Guava and Cheese. (A few of those you’ll have to stop in and try soon, as they’re on June’s monthly menu.)
What Now reached out to Salt & Straw Founder & CEO Kim Malek on Thursday to ask about plans for the brand’s debut on the Strip. Malek was not immediately available for comment.
