This week, Wynn Las Vegas announced that it is continuing to build out its restaurant roster with a new concept from restaurateur Scott Sartiano and Bond Hospitality. This winter, Sartiano’s Italian Steakhouse will debut at the resort with three-time James Beard Foundation award-winning chef Alfred Portale as culinary director and Chef Michael Rubinstein heading up the kitchen day-to-day.
A press release describes the new restaurant as a “modern reinvention of the classic steakhouse” that “pays homage to Sartiano’s family roots in Naples, Italy, and expands Wynn’s fine-dining portfolio.” It will be located in an exclusive spot overlooking Wynn Golf Club, adjacent to Bond Hospitality’s Zero Bond. The space features a bar, restaurant, lounge, outdoor dining, and a private dining room.
“It’s a full-circle moment to bring Sartiano’s to Las Vegas, a city built on hospitality and showmanship,” Scott Sartiano said in the press release. “This restaurant is personal, rooted in my family’s Neapolitan heritage, elevated by Chef Portale’s vision, and designed to deliver something timeless yet unexpected. Wynn is the perfect partner for this next chapter.”
The press release lists a few signature dishes from the upcoming restaurant’s menu. In addition to signatures from Sartiano’s New York, the following choices listed in the release will be on the menu:
“Golden Osetra Caviar Cannoli with whipped mascarpone and chive; Baked Clams with pancetta, smoked bacon, and lemon; Lasagna with wild mushroom, black truffle, and Parmigiano-Reggiano; Paccheri (to share) with herbed ricotta and “Sunday sauce”; Dover Sole Piccata with capers and lemon butter; and prime cuts of Bistecca, representing prized American and Japanese Wagyu offerings–including a stunning 40-ounce Double R Ranch dry-aged Bistecca alla Fiorentina Tomahawk, carved tableside and served with Brunello beef jus and salsa verde.”
