Glass Box, San Diego’s Asian coastal-inspired kitchen and sushi bar, recently opened its first expansion location in The Bend, Southwest Las Vegas on September 26. The expansion reflects the restaurant’s rapid growth following the success of its San Diego flagship and brings its signature sushi, elevated Asian-inspired cuisine and omakase experiences to the Las Vegas market. Opening on September 26, the Las Vegas location will be led by Owner and Executive Chef, Ethan Yang, a third-generation San Diego chef whose culinary point of view has defined Glass Box since its founding in 2021.
Glass Box Las Vegas will also introduce an all-you-can-eat (AYCE) option alongside the restaurant’s premium à la carte and omakase offerings – giving guests the flexibility to explore the menu’s range of sushi, sashimi, and Asian-inspired dishes at their own pace, while still preserving the precision and craftsmanship Glass Box is known for. Menu highlights include Wagyu Tataki, Hamachi Crudo, Yellowtail Kama, Bluefin Toro Uni Roll, Crab Fried Rice, Baked Lobster Roll, and Taiwanese Beef Noodle Soup. AYCE Lunch starts at $29/pp, dinner is $39/pp, and kids eat for only $20, ages 3-16.
The story behind Glass Box was to create a dining experience where guests could truly see the artistry behind their food. Too often, the preparation process is hidden in restaurants, and diners miss out on that connection with their chefs. Glass Box’s menu draws inspiration from a variety of Asian cuisines, including Japanese, Chinese, Korean, and Taiwanese flavors. Each dish highlights the unique techniques, ingredients, and cooking styles of these regions. From the delicate precision of Japanese sushi and sashimi to the bold, comforting flavors of Chinese wok-fried dishes, every item on the menu is crafted with authenticity and creativity. Korean influences shine through in dishes that highlight rich marinades, fermented flavors, and signature spices, while Taiwanese cuisine brings an element of warmth and nostalgia with its soulful broths, braised meats, and street food-inspired bites.
Glass Box Las Vegas features approximately 75 seats, a large bar area, a 500-square-foot patio, and an open kitchen style layout that puts the restaurant’s signature transparency on full display.
