Soyo Korean Restaurant Location to Open at Flamingo and Arville

David Sim, the restaurateur behind the brand, has been launching restaurants in Las Vegas for 15 years

The retail center at the intersection of Flamingo Rd and Arville St will soon be home to a new Soyo Korean Restaurant. A building permit filed recently by the company estimates a construction budget of $100,000 for a renovation at 4433 W Flamingo Rd, in a plaza that houses a number of restaurants, including Thai Spice, Umiya Sushi, Toridokoro Raku, and J Sake Bar.

Soyo Korean Restaurant is a brand from David Sim, a Las Vegas restaurateur who has opened as many as eight restaurants in the last fifteen years—many of which, including the original Soyo location, can be found at Rainbow Robindale Plaza at the intersection of Rainbow Blvd and Robindale Rd.

The Rainbow-Robindale Soyo location offers an extensive menu of Korean dishes. Its Soups and Casseroles menu includes Yook Gae Jang, a hot and spicy beef soup, Korean Blood Sausage Soup, and Bu Dae Jji Gae (chopped kimchi, spam, sausage, smoked sausage, tofu, assorted vegetables served in spicy broth with cheddar cheese on top). The menu also features noodle dishes like Ramen and the stir-fried Jap Chae.

Soyo offers a selection of BBQ dishes like Kalbi (short ribs), Sam Gyup Sal (pork belly), and the ever popular Bul Go Gi. Under “Tapas” guests will find a further variety of dishes, including Dduk Bok E (a popular street food consisting of rice cake, boiled egg, fish cake and vegetables stir fried with sweet and spicy sauce), Bo Ssam (steamed pork belly served with salted cabbage and shredded spicy radish), and Hae Mool Pa Jyun (seafood pancake).

What Now Las Vegas was unable to reach David Sim for comment.
