This week, Proper Eats Food Hall, Clique Hospitality’s food hall at the ARIA Resort & Casino, announced that it has signed SunLife Organics as a new tenant. The California-based healthy eatery already has one location in the valley (What Now reported on news of its joining Matter Real Estate Group’s UnCommons Las Vegas back in April 2022), but this will be its first time on the Las Vegas Strip.
“We’re currently under construction,” owner Khalil Rafati told What Now on Tuesday. “When they approached us I was thrilled. I’m a foodie, and no matter where I was staying in Vegas, I always went to ARIA for Carbone or Catch or Dim Thai Fung. These are some of the best food offerings in the city, I’m honored to be a part of it.”
The menu at Proper Eats will be slightly streamlined in comparison to the UnCommons location, but you’ll be able to find the brand’s Greatest Hits. A press release published by Proper Eats Food Hall also teases brand new exclusive menu items like the Vegas Bowl, an acai bowl topped with hemp granola, strawberry, blueberry, raw cashew butter, goji berries, raw cacao nibs, bee pollen, Himalayan pink salt, coconut shreds and raw local honey.
You can also expect favorites like the Shroom Shake (made with banana, raw chocolate plant protein, peanut butter, Dawn Patrol coffee elixir, date syrup, MCT powder, Himalayan pink salt, cinnamon, oat milk and LifeCykel mushroom) and the Hawaiian bowl (acai topped with hemp granola, banana, strawberry and coconut shreds.)
“SunLife Organics brings a fresh, purposeful energy to Proper Eats, elevating our commitment to offering something for everyone,” Andy Masi, founder of Clique Hospitality, said in the press release. “With its focus on wholesome ingredients and a lifestyle-driven philosophy, SunLife is the perfect addition to our diverse lineup of dining experiences.”
The secret to the brand’s consistency has been its moderate pace of growth, never skimping on the quality of its ingredients, Rafati told What Now.
“Because there’s no institutional funding, we’ve done the opposite of what a lot of other brands do. They start great, raise money, scale quickly, and ultimately have to dumb down the ingredients. We grew very slowly: 14 locations in 19 years. So I don’t have guys in suits trying to tell the women who run my company to cut costs. We’ve actually increased the quality and integrity of the ingredients as we’ve grown.”
SunLife Organics is expected to open at Proper Eats later this summer. Bon appetite!
