All-You-Can-Eat Sushi Collaboration Sushi Time to Open in the Heart of Chinatown

Sushi Time's menu will be a team effort by longtime Las Vegas sushi chefs

Sushi Time, a new all-you-can-eat sushi restaurant, will open soon at 4215 Spring Mountain Rd.

The opening was confirmed by Ellen Chong, a contact at the project, in a Monday afternoon phone call with What Now Las Vegas. Sushi Time, Chong said, represents a collaboration between chefs from longtime Las Vegas sushi mainstays like Yama Sushi and Jjanga Sushi.

“We’re in the middle of collaborating with all of our chefs to innovate some new menu items and incorporate them into our current all-you-can-eat menus,” Chong said.

Further details about the restaurant’s menu and operating hours are unavailable at this time. The restaurant will have a modern interior and atmosphere, Chong added. She declined to comment further.

The Spring Mountain location is part of Chinatown Plaza, a retail center that houses a variety of dining and retail outlets, including Taiwanese restaurant Noodle Pot, 888 Korean BBQ, Ramen Show, and No. 1 Boba Tea.

An opening date has yet to be announced for Sushi Time.
