When Kyle Cunningham founded The Coffee Class in 2019, the budding entrepreneur had no way of knowing what was coming. Just as the new cafe was getting up and running, the world entered into the long and difficult uncertainty of the COVID-19 pandemic.
“Right away, we had to close for three months,” Cunningham told What Now on Thursday. “Then, we reopened with a skeleton crew. But it was already a new world. We didn’t know how long lockdowns would last.”
But despite that difficulty, the local cafe had encountered a customer base that Cunningham says kept the brand alive.
“Our customers came out to support us and got us through. We almost didn’t make it that first year. It’s really only because of the customers that we’ve been able to do what we did.”
What Coffee Class did was thrive. In short order, a second location opened in 2022, followed by a sister brand, the dairy-free Almond & Oat, which launched in 2023. Now, The Coffee Class is gearing up to open a third location at 9580 W Sahara Avenue this May.
“Our business has growing at a rapid clip, which so exciting,” Cunningham said.
The new location will be about twice the size as the Coffee Class’s first, featuring expanded seating, plus a full kitchen, which means an expanding menu too.
“At the Summerlin area café, Executive Chef Michael Morganti is leading the savory expansion with new menu items such as the Corned Beef Crispy Tomato Bowl (vegan), Vegan Steak Benedict, and Salmon & Brioche Benedict,” says a press release shared with What Now. “On the pastry side, guests will find sweet additions like the Pistachio Cream Poptart and a forthcoming collection of lightly dusted donuts developed by Executive Pastry Chef Beth Ryan-Small.”
