Beloved West Coast chain Togo’s Sandwiches is preparing to launch its third location in the Las Vegas Valley. Headed up by brand-new franchisees Katie and Tom Matthews, the new sandwich shop is opening very soon at 9720 S Rainbow Boulevard.

To bring Togo’s to Vegas is to bring the city a little piece of home, Katie Matthews told What Now on Thursday.

“Togo’s was founded in 1971 in the Bay Area, where [Tom] and I are from,” Matthews said. “We had Togo’s since we were born; it’s what we grew up on. So when our family relocated to Las Vegas, we kept saying, ‘I could really go for Togo’s right now, and there aren’t so many here.’”

And so began the Matthews’ process of launching three Togo’s locations in Las Vegas. The first opening is coming soon, and Matthews says subsequent locations can be expected to open in the north (mentioning Centennial Hills in particular). The actual sites have yet to be revealed, however.

“We are thrilled to welcome Katie and Tom Matthews to the Togo’s family,” Togo’s Eateries CEO Glenn Lunde said in a press release. “I am confident that with their passion for excellence, our third location in Las Vegas will continue to deliver on Togo’s brand promise of providing the best hand-crafted sandwiches.”

Togo’s numbered sandwich menu features a wide range of choices, arranged by protein: there are Pastrami & Roast Beef, Cheesesteaks, Hot Chicken, Turkey, and selection of classics.

Katie Matthews recommends #24, Turkey & Avocado (1/4 lb. of whole breast turkey & fresh avocados served Togo’s style). Tom Matthews’ favorite, Katie says, is the #9, Hot Pastrami (1/4 lb. of West Coast Pastrami with yellow mustard, served Togo’s style).

“What really sets apart is the quality: our bread, everything sliced there in-store, avocados that are the industry standard,” Matthews said. “It’s a good-sized portion at a great value.”
