Las Vegas’s “ultimate destination for all thing birriaVitos Tacos appears to be continuing the rapid expansion it has been undergoing since its founding in 2020. The chain currently encompasses several food trucks and two brick-and-mortar locations, and building permit paperwork submitted recently to Clark County shows plans for another restaurant location.

The paperwork is for an interior tenant improvement for a new 1150-square-foot restaurant, with a valuation of $150,000 for the work. No address is included for the location, but the parcel referenced is situated on the south side of East Silverado Ranch Boulevard between South Las Vegas Boulevard and Gilespie Street.

Vitos Taco’s most popular item is its Queso Taco (slow-cooked beef or chicken, corn tortilla, mozzarella cheese, topped with onion & cilantro). Its imaginative birria-based offerings include Birria Fries (Golden French fries crowned with juicy beef or chicken, our special house-made cheese sauce, green salsa, onion & cilantro), and Birria Ramen.

What Now reached out to owner Victor Gonzalez on Friday to inquire about plans for a third Vitos Tacos location. Gonzalez declined to comment.
