Team Behind Blue Hen Chicken Co. to Open Adjacent Market Stork and Farm

The market will feature produce from 80 different farms, along with goods from local farmers markets

With brunch, crepes, sandwiches, and more, Blue Hen Chicken Co. offers tasty food in a relaxing atmosphere, along with a variety of coffee drinks, in its home in suite 120 at 6250 W Charleston Blvd. The team behind Blue Hen, Joel Walsh and Joyce Hwang, are now looking to expand their reach with a new market attached to the restaurant, to be called Stork and Farm.

“We’re working with regional farms and farmers markets,” Walsh told What Now Las Vegas in a phone call on Friday morning. “It’s going to be good, healthy produce at a reasonable price.”

Stork and Farm’s produce will be supplied by 80 different farmers with whom Walsh and Hwang have formed relationships from past ventures—and that’s not all the local-focused market will have to offer. Local farmers and artisans will also supply bread, dried herbs, and other goods, Walsh said, painting a picture of a market full of locally made items whose walls are hung with local art for sale.

In the future, Walsh added, Stork and Farm also hopes to start providing fresh pressed juices, as well as delivery boxes featuring a variety of produce. There are also wholesaling plans, with the market looking to connect partner farms with other Las Vegas restaurants.

Stork and Farm is expected to open adjacent to Blue Hen Chicken Co. before the end of this spring.
