Fat + Flour is founded by Nicole Rucker, a chef and author with a rustic approach to baking, based in Los Angeles. Before starting her own bakery brand, Rucker was the pastry chef for the Gjelina Group. The Group comprises some of the popular bakery brands, including Gjusta and G.T.A.

In 2012, Rucker won blue ribbons at the National Pie Championship, KCRW Good Food Pie Contest, and was awarded as Star Chef for baking. Through her baking style, Fat + Flour became the go-to spot for pies, cookies, and other desserts in Los Angeles.

In addition to her bakery career, Rucker has become a cookbook author as well. She was nominated for a James Beard Award for baking for her first cookbook, “Dappled: Baking Recipes for Fruit Lovers.” In addition, she published another book in April 2025 titled “Fat + Flour: The Art of A Simple Bake”.

Over the years, Fat + Flour expanded its visibility through locations, at places like the Grand Central Market, where the bakery served rotating selections of pies, cookies, and coffee from Right Quick Roasters.

Grand Central Market has become a major dining destination for both locals and tourists. The closure of Fat + Flour bakery marks a significant impact on its loyal customers.
