Colossus Bread Opening Restaurant and Cafe in San Pedro

Colossus Bread, a woman-owned and operated bakery in Long Beach and San Pedro, is getting ready to open another location in the latter, this time at 511 S. Harbor Blvd.

The company’s third location is set to move into the ground floor of Vivo on Harbor, an eight-story, 137-unit apartment complex designed by Culver City-based KFA Architecture, according to the Los Angeles Business Journal. This is the latest development from High Street Residential, an operating subsidiary of Trammell Crow Company. Residents are expected to move in November and will have many amenities, including a rooftop clubhouse, two rooftop decks, a water-facing coworking space, a fitness center, and more.

While the development is approaching its grand opening, and the San Pedro Waterfront is open for pre-leasing, Colossus Bread already has big plans for its site. Colossus Bread will open a new location as a restaurant and cafe at the site, offering an expanded selection of sourdough pizza, natural wines, and grocery items. This will be an excellent spot for the company’s newest location, considering it is walking distance from the 42-acre West Harbor development, formerly known as the Ports O’ Call Village, which is set to open in 2025.

This is a massive accomplishment for Kristin Colazas Rodriguez, a pastry chef and baker who founded the company in 2018. After a year and a half of overnight shifts, hand-mixing and hand-laminating, and pop-ups, Colossus Bread opened its first shop in San Pedro in 2019, right before the pandemic had started. A second larger bakery opened in Long Beach in 2021. Hopefully, the company will open its third brick-and-mortar by the end of the year, although an exact opening date has yet to be announced. When it opens, customers can expect a variety of whole grain long, fermented sourdough bread and seasonally inspired croissant pastries.
