Poke World Bubble Tea store in Cordova recently underwent a routine health inspection. The inspection resulted in the eatery receiving an unsatisfactory score. On-site inspectors documented several violations in the establishment in a health report.

According to the report, the manager lacked necessary food-safety knowledge, leading to multiple violations. Inspectors offered guidance during the inspection.

The employees did not change their gloves or wash their hands in between cooking multiple foods and ringing customers. Inspectors also saw an employee cutting salmon on the 3-compartment sink’s drain board. They could not provide required time-control logs for certain foods. Employees worked in the food prep area without hair restraints.

A small container of raw chicken wings was stored inside a box with uncooked veggies. Multiple cold-holding food items were stored above 41°F. The raw tuna, salmon, cooked chicken, and spring mix in the cold-holding on the serving line were above 41°F.

There were no thermometers in the standing or chest freezers. There was a heavy ice buildup in the whirlpool deep freezer. And the food items in the deeper freezer and walk-in cooler were not properly labeled.

The bleach and dish detergents were on the floor of the kitchen. Wiping cloths were stored on the counters and prep coolers. There was no chlorine testing strip present in the facility. Inspectors also noted diluted hand soap in the restroom.

The kitchen back door was propped open, making it inefficient in preventing the entry of pests. The dumpster was overflowing with trash.

Follow-Up Inspection

Within 10 days, the management needs to correct the violations mentioned. This is to avoid the suspension of the permit for the business. They may request a hearing against the report during this period.
