Rotolo’s Coming to Collierville; Possibly Southaven Next

Rotolo’s Craft & Crust, the Baton Rouge-based restaurant with one site already in East Memphis, is opening a new location in Collierville.

The area’s second site will be a part of the Water Tower District in Schilling Farms at 1125 Schilling Boulevard, according to the Daily Memphian. This will be the fourth Rotolo owned by franchisees Blaire and Taylor Bobo, along with two others in Louisiana. The construction on the space, which includes a Crumbl Cookies South of Beale, and two vacant space facing Poplar Avenue, is nearly complete. The new Rotolo’s Craft & Crust is expected to open by the end of the year.

“We have been interested in Collierville from the get-go,” Blaire Bobo tells the Daily Memphian. “We are excited about the new developments and everything going for it. We live in East Memphis but are in Collierville often because our kids play sports there.” 

The duo opened Memphis’ first Rotolo’s in May 2022, and quickly grew popular, seeing lines out the door since opening. The restaurant offers everything from shareables, wings, pasta, and handhelds, as well as a variety of pizzas. Blaire and Taylor Bobo are already planning to open new locations, with Southaven being a possible option next.

“We have a great relationship with Blaire and Taylor,” Jonathan Aur, founding partner with Jones Aur Commercial Real Estate, told the Daily Memphian. “It was always the intention to do another location. So we looked at what made the most sense. (Eateries) are the best anchors. They really set the tone for the development. We like to figure that out first, then we can plug and play with everybody else.”
