Rancher’s Reserve, the Okeechobee-based ranch and hospitality company behind West Palm Beach’s Fern restaurant, is preparing to launch a new butcher shop and sandwich place in West Palm Beach. It’s another—and not the last—restaurant concept from a team of ranchers who believe strongly in responsible ranching, owner Nick Scalisi told What Now on Tuesday.
“It’s going to be kind of your traditional butcher shop, with a small kitchen there serving an ever-changing menu using products from the shop,” Scalisi said.
Meats on offer will include beef, poultry, and pork, and the shop boasts a wood-fired oven, great for cooking steak sandwiches, burgers, and other prepared foods. The space will include, alongside the butchery, a few tables both inside and outside.
For Scalisi and Rancher’s Reserve, it’s all about responsible farming. Like Fern, Steak Shop will serve as an outlet for Rancher’s Reserves meats, but will be plenty of products from other local farmers in Florida and beyond—“anyone,” Scalisi says, “any ranch, that has the same vision we have.”
Steak Shop is opening in early 2025, and Scalisi says that’s not all Rancher’s Reserve has in store for West Palm Beach: there are also plans for a new steakhouse in the works.
