3 Pierre 1 Feu, a tribute to ancestral cuisine, Afro-Caribbean spirit, and Haitian roots with a touch of Texas BBQ, is preparing to debut in Montreal at 7070 Avenue Henri-Julien.
This is the latest from Chef Paul Toussaint and pitmaster Damien Brockway, according to the company’s social media. It’s unclear when 3 Pierre 1 Feu will open, but it will be located within Jean-Talon Market. Brockway, hailing from Austin, Texas, is the visionary behind Distant Relatives, where he blends African diasporic flavors with BBQ mastery. Recognized with the Michelin Guide Bib Gourmand Award in 2024 and many other accolades, Damien’s culinary journey is rooted in history and culture.
Damien blends technical mastery with a profound respect for history and culture, celebrating the flavors and stories of the African diaspora. His work honors his heritage and pushes culinary boundaries, earning him a well-deserved reputation as a leader in modern American cuisine. Together with Chef Paul Toussaint, he will soon open 3 Pierres 1 Feu, uniting their culinary visions in a tribute to ancestral cuisine with a touch of Texan BBQ.
On the other hand, Chef Paul Toussaint is originally from Jacmel, Haiti, and found his true calling in the kitchen. He honed his skills at LaSalle College’s culinary program and later at the renowned Toqué! Restaurant. In 2020, he opened Kamúy, a vibrant Caribbean spot in Montreal’s Quartier des Spectacles, where he blends bold Haitian flavors with French techniques. His work has earned him significant accolades, including being named Eater Montreal’s Chef of the Year in 2021. Beyond cooking, Toussaint is all about celebrating Caribbean culture, turning Kamúy into a space where food, art, and community come together.
