Louisinana, a new soul food restaurant with a jazz ambiance, will open soon in Centropolis Laval at 1799 Av. Pierre-Péladeau.

Jack Gaspo, Cedrick Vanier, and Lino Lozza are bringing the project to life, with interior design by Anonymus Concepts and construction by Groupe Manovra. Although this highly anticipated restaurant is currently under construction, it remains unclear when it’s expected to open.
Centropolis is a vibrant lifestyle destination in Laval, featuring over 100 establishments, including 31 restaurants and 12 shops. The area attracts over 7.6 million visitors annually and offers a diverse mix of upscale dining, entertainment, and cultural experiences. Notable dining options include LOV, Elixor, ZIBO!, and Monza.
Centropolis is an excellent location for Louisinana’s debut. The area receives a high volume of foot traffic and attracts people seeking good food and entertainment. It already has a solid mix of restaurants and venues, so Louisinana’s twist on Southern cooking and jazz vibe should fit right in. Easy access by car or public transit makes it a convenient destination for locals and visitors alike.
Jack Gaspo is known for his work with Jack Flat BBQ, a concept that emphasizes bold flavors and a laid-back atmosphere. Cedrick Vanier co-created Jack Flat, bringing a creative culinary vision that blends traditional techniques with contemporary flair. Lino Lozza has been behind several successful concepts, including Société Traiteur, Société Box, Société Grazing, Prêt à Table, Resto Jack Le Coq, and Jack Flat BBQ, each offering unique dining experiences that showcase his versatility and commitment to quality.
