Local sushi chef Arthur Stacks is planning a handroll bar in West Nashville. Stacks will open Hattori Nori this April at L&L Market.
Stacks, who operates local sushi catering company Ricey & Co., drew inspiration for the concept from his own travels. He tried a handroll bar in Los Angeles and wanted to bring the concept back to Nashville. Since then, he has traveled as far as Paris and Mexico City, trying different handroll bars and conceptualizing Hattori Nori.
“The main focus is on the main ingredients — rice, fish and nori,” Stacks told What Now Nashville. “That’s what sushi is all about. I thought it was a great idea to bring this to Nashville.”
Hattori Nori will be a 40-seat bar in L&L Market, serving handroll sushi as well as some sake, wine and beer. Stacks is keeping the menu simple, focusing on and celebrating the basic ingredients of sushi. Stacks wants it to be a fun, affordable place for people to go and grab some sushi without spending hundreds of dollars for an experience.
“Even for me as a consumer, I love the experience — sitting at the counter with the chef and the chef making it there for you,” Stacks said. “You get to experience the crispy nori, the warm rice and the fish all coming together.”
