New Restaurant To Open In Canopy By Hilton In The Gulch

New restaurant Silo is slated to open as part of the food and beverage lineup at Canopy by Hilton Nashville Downtown The Gulch, which is expected to open in spring 2025, according to a release.

Silo will act as the Canopy’s main floor restaurant, offering Yazoo beers on tap to pay homage to the hotel’s site, which was formerly Yazoo Brewery. A silo will be repurposed as the entrance to the restaurant, and it will feature a hand-painted mural by local artist Maggie Sanger James. The spot will also offer a large ground-floor patio. 

Alongside the beers on tap, Silo will serve an all-day seasonal menu of gastropub food. It will also offer items from local brands Five Points Pizza and 8th & Roast, which will both have outposts in the lobby.

“It’s very approachable,” Tiffany Lombard, general manager for the hotel, told What Now Nashville. “So it kind of meets your everyday needs.”

Lombard said that she believes the food and beverage program at Canopy in the Gulch will set the hotel apart. In addition to Silo, the hotel features a rooftop restaurant and bar, COA.

“I think we’re really excited to launch this in early 2025 [and] really excited to see how the community embraces us,” Lombard said. “So far, everybody has really welcomed us all into open arms, because not many of us are from here. We are really excited to bring what we have and our experience to this great city, because this is really just an amazing city with great culture and great development. We are happy to be a part of this neighborhood.”
