The Canopy by Hilton Nashville Downtown The Gulch opened its doors earlier this year, alongside multiple food and beverage options highlighting local brands. Among the offerings are a Five Points Pizza window, 8th & Roast Coffee Bar and focal hotel restaurant Silo, which serves New American cuisine.

However, a rooftop bar is still to come at the hotel, slated to open later this year. COA will have a strong focus on agave, serve refined Mexican food and have the largest agave bottle list in Tennessee, according to The Canopy website.

David Henriquez will head up the menu for the location, and it will feature an agave garden, according to a past release.

The spot in The Gulch will supplement the current food and beverage offerings at the hotel. In addition, a speakeasy is slated to join the hotel’s offerings after COA opens its doors. The speakeasy, which will serve Asian fusion bits and creative cocktails, has set an opening date in 2026, according to the hotel website.

The much-anticipated The Canopy just opened its doors on June 12 after a long development process for the hotel. It is now accepting reservations at 920 Division St.
