Rooftop Bar and Restaurant Slated For The Gulch

The rooftop restaurant will go into the new Canopy by Hilton opening next year.

As part of the Canopy by Hilton that will be opening in spring of next year, a rooftop bar and restaurant, COA, will be opening at the hotel.

The space will be an 8,000-square-foot rooftop and will serve elevated Mexican cuisine curated by executive chef David Henriquez, according to a release. The menu will focus on shareable plates featuring Mexican dishes. Tortillas and salsas will be made in house.

““It is going to be an agave-focused rooftop bar,” Tiffany Lombard, general manager for the hotel, told What Now Nashville. “We will have a heavy agave-focused menu. We’ll have over 200 bottles of tequila, mezcal and agave spirits.”

COA will also offer views of the Nashville skyline as well as a 600-square-foot agave garden.

“Our Gulch location will combine energetic and experiential spaces with beloved Nashville character,” Lombard said in the release. “We want locals and travelers to feel inspired, connected and invigorated. Our goal is to create an experience that feels new and fresh to the city.”

Reservations for COA are expected to open in January 2025, with Canopy slated to open in the spring. 

COA will join other food and beverage offerings at the Canopy, including local brands Five Points Pizza and coffee shop 8th & Roast.
