Launched in 2018, The Big Cheezy food truck has been a late-night Tigerland staple, and that success is now being parlayed into a Baton Rouge location at 144 W Chimes St. The location had been home to Soulshine Kitchen and Bar, which closed in November 2023.

The Big Cheezy’s menu of melt sandwiches and different mac-and-cheeses became an instant hit with the LSU student body. The truck regularly had long lines of students waiting for popular items like its namesake The Big Cheezy, a triple-decker grilled cheese with gouda, American, and cheddar cheeses. Given the strong connection to the university, putting a location close to the North Gates of LSU makes perfect sense. The brick-and-mortar location is set to open in March with an expanded menu of similar items. Naturally, it will be open late nights from Monday to Saturday.

According to reports, owner Blaize Romancik had recently been in discussions to bring The Big Cheezy to Tiger Stadium, but LSU pulled out of the deal at the last minute. Romancik’s promise to move on to “bigger and better things” after the deal broke down appears to be coming to fruition.
