French Settlement Roasting Co. is expanding to Denham Springs. Fresh off the news that the roastery is opening its first cafe in Maurepas, husband-and-wife co-owners Shannon and Billy LaGrange have lined up another location on 535 Florida Ave.
FS Roasting Co. is expanding into the area in collaboration with the existing restaurant in the building, Yellow Brick House. “They will do the breakfast and we will do the coffee,” Billy LaGrange says.
Billy LaGrange got into roasting his own coffee beans using a popcorn machine. He founded FS Roasting Co. and moved operations from his popcorn machine to a roastery in Holden. The veteran-owned business enjoyed wide success, supplying speciality coffee to cafes across Baton Rouge, including on LSU’s campus, and selling directly to coffee enthusiasts, available in grocery stores around the area and online. The pair also serves their coffee out of a food truck called Espresso Geaux. In 2025, FS Roasting Co. was awarded Small Business of the Year by the Livingston Parish Chamber of Commerce.
In addition to its expansion in Denham Springs, LaGrange says that FS Roasting is also opening a franchised location on Juban Road, marking two planned expansions before the first location in Maurepas even opens its doors, slated for a mid-March opening.
“We still are working on the one on Maurepas,” LaGrange says. “Then we will move on to the one on Denham Springs.”
