Frissons is Bringing Cajun Flavors to the Former Rosalita’s

Expect Cajun flavors and craft cocktails in a chill, natural setting

The Bywater lost a neighborhood gem when Rosalita’s closed last August. However, you may soon be able to enjoy the popular back patio again, albeit without the very affordable tacos for which Rosalita’s was known. When it opens in the late spring or early summer, Frissons will bring traditional Cajun flavors to 3304 Saint Claude Ave. Owner Beaux Church recently told What Now New Orleans that he’s bringing back the same chill vibes, but with a very different menu.

“In general, it will be a casual place that you can go to with your friends and relax in the backyard,” he said. “I’ve added a lot of landscaping and made the space look as natural as possible.”

Boudin will be the star of the show at Frissons. Traditional and vegan boudin will be available, with the latter having a base of red beans and rice. Frissons will also feature a couple of different kinds of gumbo, including a vegan gumbo. All of the food will be gluten-free and the menu will focus on fresh ingredients.

In addition to soft drinks, Frissons will also have a craft cocktail program with drinks inspired by New Orleans. For example, the Voodoo Garden will be a sipper crafted with mezcal and blackberry. Church said it is important for Frissons to start with tightly focused menus, and potentially expand offerings from there.

“I only want a few things on the menus because I want to do a few things really well,” he explained.
