Born out of improvisation at a cookout, Shane’s Quesadilla Burgers in Lafayette has been growing in recent years, and the most recent expansion will be the opening of a second location in November at 803 W Pinhook Rd. in Lafayette. The upcoming location is actually a reopening of the original location, which closed about one year ago. While the current location at 3822 W Congress St. in Lafayette has restaurant seating and two floors with a bar on each floor, the new Pinhook location will be a fast-casual format. Earlier this year, What Now New Orleans reported on the opening of Shane’s Loaded Mac Bar, a different fast casual concept from the same owner, Shane Vallot. The restaurant specializes in comfort food, especially loaded Mac-and-cheese. As opposed to healthier fast-casual spots like Cava, Vallot said the loaded mac bar is a place “where you can go and be a big back.”
