After more than a decade of catering, including at Super Sunday and other New Orleans events, caterer Travin Johnson is opening a brick-and-mortar takeout restaurant called Swamp’s Bayou Kitchen in Thibodeaux this coming spring. While Johnshon’s Swampwaterboyz Catering is known for its jambalaya and pasta-laya, past catering menus have also included fried pork chops, fried ribs, chicken wings, seafood boils, and boiled meat.
Johnson recently told What Now New Orleans that the menu at his new takeout spot in the former Jude’s Hot Chicken and Shakes will be the greatest hits from past catering menus.
“Everything that I do, I’m gonna have at the restaurant,” he said. “So, you could come in and get it all at one time.”
Followers of the catering company have been anticipating the opening of Swamp’s Bayou Kitchen, and Johnson says people regularly stop in while he’s fixing up the space at 1801 Canal Blvd. in Thibodeaux.
“There’s a lot of people in the community that especially love my jambalaya and pasta-laya,” he said. “A few weeks ago, people started pulling up and asking if we’re open already, so we had to put up a sign saying, ‘Coming Soon’!”
