New Oyster Bar Coming to Baton Rouge from Area Restaurateur

The new Bayes Oyster Bar is set to replace the former Jolie Pearl Oyster Bar in downtown Baton Rouge

With a couple of restaurants specializing in seafood already under his belt, Baton Rouge restaurateur Rick Volland is preparing to open Bayes Oyster Bar in the city’s downtown neighborhood at 315 North Blvd. The restaurant is slated to open this spring.

According to a report from 225, Volland had been a partner in the previous restaurant located at this address, which was called Jolie Pearl Oyster Bar. Conceptual differences compelled Volland to depart that venture about a decade ago, and now he’s set to reopen a similar concept with his son Ricky Volland. In fact, Bayes will reportedly resemble the original oyster-heavy concept for Jolie Pearl, as the latter slightly skewed away from oysters after Volland left. The Bayes menu will feature oysters from both the West and East costs. There will also be shrimp dishes and sandwiches. The father-son duo are reportedly big fans of LSU baseball and plan to make the oyster bar a destination for fans of the team.
