While many third-wave coffee shops can come across as temples to the art of coffee, an upcoming third-wave coffee shop at 3726 St. Claude Ave. in the Bywater takes a less serious approach. Ghost Ship Coffee Roasters will feature single-origin coffees and espresso drinks, but it will also have ghost pirate décor and dirty sodas. It is set to open in December.

Co-owner Brian Gallaher recently told What Now New Orleans that espresso flights at the café will allow guests to try different espresso roasts beyond the dark, bitter roast that is the most common.

“Those really dark roasts are good for cappuccinos and lattes,” he said. “But there are lighter roasts that are more for sipping and enjoying on their own. If you got like a citrusy roast, or one that has berry flavors, you’re not really going to want to make lattes and cappuccinos out of it.”

The café will also offer Scurvy Sodas, which are its take on dirty sodas. These are made from a Dr. Pepper or other base soda, flavored syrups, and cream or half-and-half. The café will also have light breakfast and lunch fare provided by an outside supplier.

The café will be located in a large blue house on Saint Clade Avenue. Seating will be available on the wrap-around porch and two inside rooms. The décor will match the pirate theme, but it won’t be over the top, Gallaher said.

“This house is pretty historic, and we didn’t want to do too much to it because it’s got its own charm,” he said.
